Potatoes can be stored for up to two to three months at room temperature. When stored in a refrigerator, a carcinogen called acrylamide is generated due to low temperature damage and the storage period is reduced. Moist food like onions makes potatoes soften quickly, so it is better not to store them together. It's a good way to store one or two apples together. This is because ethylene gas from apples inhibits the germination of potatoes.
