◇ Marinate before baking
Let the meat marinate for about two hours in a beer, wine or herb sauce before grilling it. A heterocyclic amine is a type of carcinogen that occurs when a substance called amino acid or creatine in meat meets a fire of 177°C or higher. Several U.S. studies have shown that marinating meat in advance can prevent the production of heterocyclic amine by 90-100%.

Herbs, in particular, contain anticancer substances such as taemol and phenol, preventing the formation of carcinogens called enitroso compounds when meat enters the body. The herb spice paste can be made by crushing herbs such as thyme, mint, sage, rosemary, oregano, and basil, and mixing them with lemon juice, wine, and vinegar. If the sauce is cumbersome, just rubbing the herbs on the meat will work to some extent.

◇ Grilled over low heat
If meat is grilled over a high heat of 200°C or higher for a long time, a large amount of carcinogens are produced. Most of the healthy ingredients, such as protein in meat, are also burned. It's better to grill it over low heat for a short time, but then the meat may not be cooked well. To prevent this kind of problem, we need to grill it first. It is also good to cook the meat in the microwave for 1 to 2 minutes before grilling it. Microwaves in microwave ovens break down compounds that make heterocyclic amines in meat.

◇Wiping the grill
It is recommended to wipe the grill before and after grilling meat using kitchen towels or steel brushes. This is because the fat of the meat may stick to the grill in a blackened state. This part contains a large amount of carcinogens. After wiping, rinse with hot water. E. coli that may remain on the grill can be sterilized.

◇ Add vegetables
Add vegetables such as broccoli, cauliflower, cabbage, and turnip. It can be grilled with meat or served separately. Crossflower vegetables contain a lot of compounds called sulfolafan, which have the effect of removing carcinogens that damage genes in the body.
